We carefully chose the beautiful English heritage Berkshire pig due to the breeds heritage classification, docility, hardiness to roaming the paddocks, excellent fat qualities and because they are grown for their flavour. We run around 80 breeding sows, the whole herd eat only natural ingredients without traces of any chemicals and really are living a free and happy life on our farm. Our piglets are born outside or in huts, and roam paddocks until the end of their days. We see our programme assisting in sustaining the Berkshire breed for the future and have breeding stock available for other breeders at certain times of the year.
The pork produced by our pigs is rich, sweet and has a clean taste, soft fat and great marbling which keeps the meat juicy. It has a unique flavour and is melt in your mouth tender. This is what real grass fed pork should taste like: no additives, no water injected, no hormones and no antibiotics, just real natural pork. The pigs travel half an hour to the abattoir, this low stress short trip is the final quality control step we take extra care with. All the meat is packed on the farm in the Farmstead Butchery where we handcraft our own small goods including ham and bacon that is smoked over river red gum from the farm and surrounding forests, air dried whole muscles such as capocollo, guanciale, pancetta and air dried whole hams.
